Fresh local Tiger prawns served with a crisp vegetable & sprout salad drizzled with a chilli & lime dressing

Tableland salad of mesclun, vine ripened cherry tomatoes, fresh garlic croutons and Spanish onion finished with a honey mustard dressing

Lemon myrtle infused kangaroo loin on a bed of wild rocket & toasted macadamia nuts garnished with homemade fig chutney

Locally caught pan fried reef fish served with lightly steamed seasonal greens and finished with a fragrant coconut & kaffir lime broth

Jungle spiced chicken breast with an aromatic fresh date & fire roasted red pepper cous cous topped with a mint and bush lime yoghurt

Slow roasted Black Angus sirloin served on a warm kipfler potato & green bean salad accompanied by confit cherry tomatoes & finished with a red wine jus

Finale

Traditional Pavlova accompanied by seasonal tropical fruits, fragrant vanilla bean chantilly cream & passion fruit coulis

Entree

Handmade local reef fish tortellini served in lobster bisque with vine ripened tomato and fresh herbs

Salad of confit duck with fresh pear, Spanish onion, cranberries, wild rocket & shaved Parmesan finished with fig vincotto and roasted garlic lavosh

Tiger prawn cutlets on a bed of green pawpaw salad with a chilli and peanut dressing

Salad of balsamic glazed baby beets, dukka crusted goat’s cheese and baby spinach drizzled with vanilla bean vinaigrette

Main Course

Pan fried Coral Trout on a warm salad of kipfler potatoes, sugar snaps peas  and vine ripened cherry tomatoes finished with a salsa verde

Macadamia nut crusted stack of eggplant and char grilled vegetables topped with goat’s cheese and drizzled with basil pesto

Roasted thyme & garlic marinated lamb rump served on a medley of char grilled seasonal vegetables finished with an apple and mint balsamic reduction

Black Angus sirloin accompanied by potato gratin and topped with a smoked cherry tomato compote and port wine jus

Dessert

Lemon and lime tart with coconut mousse & passion fruit coulis

Individual traditional Pavlova topped with seasonal tropical fruits  & Kahlua cream

Sticky date & black sapote pudding with double cream & butter scotch sauce
